L\u2019any 1860, a Cuba n\u2019hi havia 1.365 <em>ingenios<\/em>, i tots funcionaven amb m\u00e0 d\u2019obra esclavitzada. El sucre que produ\u00efen representava el 82 % de les exportacions cubanes.<\/p>\n<p>Alguns propietaris catalans de plantacions de canya treballades amb m\u00e0 d\u2019obra esclavitzada van ser Sebasti\u00e0 Plaja Vidal, Joan Anglada Carreras, Joan Forgas Bay\u00f3 i Jeroni Rabassa, a Puerto Rico; i, a Cuba, trobem Isidre Sicart Soler, Josep Carb\u00f3 Martinell, els germans Pau Llu\u00eds i Tom\u00e0s Ribalta Serra, i Joaquim F\u00e0bregas, entre altres. Tamb\u00e9 van ser hisendats esclavistes i ve\u00efns de Barcelona Josep. P. Taltavull Garcia (nascut a Ma\u00f3), Agust\u00edn Goytisolo Lezarzaburu (nascut a Lekeitio) i els germans Antonio i Claudio L\u00f3pez L\u00f3pez (nascuts a Comillas).<\/p>\n<p>El sistema de producci\u00f3 esclavista va donar lloc a una societat en qu\u00e8 els propietaris dels <em>ingenios<\/em> vivien amb una opul\u00e8ncia desmesurada, mentre que les persones esclavitzades malvivien en la mis\u00e8ria, sense cap dret i dedicades exclusivament a la tasca productiva.<\/p>\n<p>[\/et_pb_text][\/et_pb_column][\/et_pb_row][\/et_pb_section][et_pb_section fb_built=&#8221;1&#8243; Va ser un dels m\u00e9s importants de la seva \u00e8poca.<\/p>\n<p>A mitjans del segle XIX Cuba era el principal productor de sucre del m\u00f3n i a tota l\u2019illa hi varen proliferar els anomenats \u201c<em>ingenios<\/em>\u201d, hisendes colonials que funcionaven amb m\u00e0 d\u2019obra esclava, destinades a la producci\u00f3 de sucres, mels i aiguardents de canya. La canya, un cop tallada, es transportava al mol\u00ed, que podia funcionar amb la for\u00e7a d\u2019animals de tir o amb energia hidr\u00e0ulica en les instal\u00b7lacions m\u00e9s modernitzades; de la molta s\u2019extreia el primer suc de la canya, el <em>guarapo<\/em>, que havia de ser refinat diverses vegades per obtenir-ne altres productes derivats.<\/p>\n<p>La purificaci\u00f3 d\u2019aquesta melassa rep el nom de clarificaci\u00f3. El suc passava a les calderes, on s\u2019escalfava per eliminar de forma manual l\u2019escuma i les impureses acumulades a la superf\u00edcie del l\u00edquid. En acabar, passava a uns tancs, on es co\u00efa i s\u2019anava concentrant mitjan\u00e7ant l\u2019evaporaci\u00f3. Aquesta tasca era un proc\u00e9s lent i requeria molta atenci\u00f3 per evitar que el producte es crem\u00e9s. D\u2019aqu\u00ed es passava a la cristal\u00b7litzaci\u00f3, tot posant el suc obtingut a les <em>paines<\/em>, on s\u2019anava refredant i es formaven els cristalls de sucre, que es classificaven, s\u2019assecaven a l\u2019aire i s\u2019envasaven tamb\u00e9 manualment.<\/p>\n<p>Una part del <em>guarapo<\/em> es podia deixar fermentar a l\u2019aire i, despr\u00e9s, destil\u00b7lar als alambins, obtenint d\u2019aquest proc\u00e9s aiguardent.<\/p>\n<p>Les persones esclavitzades eren les que duien a terme totes aquestes tasques, caracteritzades per la duresa i l\u2019exig\u00e8ncia d\u2019un esfor\u00e7 f\u00edsic molt gran en condicions extremes de calor i humitat permanents. Treballaven jornades de 10 hores, que, en temps de collita, podien arribar a 16 o fins i tot 20, amb un parell de descansos durant el dia. El menjar contenia aliments cal\u00f2rics per assegurar que tindrien for\u00e7a per fer la feina, per\u00f2 aquesta dieta poc equilibrada sovint afectava tamb\u00e9 la salut. L\u2019esperan\u00e7a de vida mitjana d\u2019aquestes persones no superava els 15 anys un cop arribaven a les plantacions.<\/p>\n<p>No totes les persones esclavitzades tenien els mateixos drets i deures; existia una jerarquia determinada per factors com ara les caracter\u00edstiques personals, les habilitats o, fins i tot, l\u2019origen, en funci\u00f3 de la qual ocupaven llocs de treball diferents. Les persones destinades al conreu de la canya \u2014els esclaus de camp \u2014 eren les m\u00e9s reprimides i controlades, i les menys valorades; en canvi, les que tenien oficis especialitzats en altres tasques del processament de la canya de sucre, podien gaudir de condicions una mica m\u00e9s favorables. Dalt de tot d\u2019aquesta pir\u00e0mide, se situaven el mestre de sucre, el mestre d\u2019aiguardent i el contramajoral, que gaudien d\u2019algun petit benefici, com ara tenir cabana pr\u00f2pia, rebre una mica m\u00e9s de menjar o una petita quantitat de sucre i aiguardent quan acabava la producci\u00f3.<\/p>\n<p>Davant d\u2019aquestes condicions, les persones esclavitzades no es van resignar mai i idearen formes diverses de resistir i boicotejar el sistema: accions de sabotatge a la producci\u00f3 \u2014malgrat la f\u00e8rria vigil\u00e0ncia i el foment de la delaci\u00f3 per part dels propietaris dels <em>ingenios<\/em> \u2014, i els intents de revolta no es van aturar mai.<\/p>\n<p>[\/et_pb_text][\/et_pb_column][et_pb_column type=&#8221;2_3&#8243;
